Ojo de Ibiza
With the help of geologists, we chose the land in Can Tixedo, located in the north of Ibiza, for our first plantation. There, we discovered that those white soils had great stories that told the origin of their rocks. We knew that the soil’s origin and its calcareous-rich components would prosper in the vineyard, but first our winemakers had to adapt techniques so that the matter and energy of the soil and vines thrived in this environment.
So, we carefully designed, in detail, the layout of the vineyard, how the vines grew, and a strategy for proper irrigation. We looked to achieve a unique balance between the soil and climate, so that our vines with would grow in a healthy environment.
The grape composition varies every year, depending upon the best grapes harvested. We use different clones, which was selected by the oenologist Alain Bramaz, as it is optimally suited to the island climate and soil conditions. The wine is produced entirely by hand in small quantities.
