Sheep and goats were the most important livestock in Ibiza and have been recognized since ancient times for wool and milk production. The indigenous black pig is the protagonist of the ‘matanza’ (slaughter), the most important feast in the island’s social calendar, while the hen and the rabbit, were animals of regular consumption due to their easy maintenance.
Little by little these animals have been displaced by breeds that grow faster. For this reason, they are all currently at risk of extinction and subject to recovery programmes. Only the black pig population has begun to recover thanks to a few local cattle farmers and some prestigious restaurants.
